Well I got sidetracked Thursday so I ended up making this for a Friday night feast!

King Salmon, French Green Beans & Tomato & Sweet Onion Summer Salad

King Salmon:
1T brown sugar sprinkled over washed and dried fish. Top with: 2T melted butter - 2T Dijon - 1 tsp. Worcestershire sauce - 1 whole head of finely minced Thai Fire garlic. Mix well and spread over fish. Bake at 400 for 15 minutes.

French Green Beans:
Steam for 1 +/- minute then spoon Shallot butter sauce on top. Fry minced shallots till they start to cook and add 1 shot of tarragon vinegar - or plain apple cider vinegar - cook till reduced then add 2T unsalted butter. Reduce then spoon mixture over green beans.

Tomato & Sweet Onion Summer Salad
2 fresh tomatoes cut into 16ths - 1 sweet onion cut into 16ths - 6 ounces crumbled blue cheese and 4-6 ounces of Italian dressing or to taste. Mix to blend & best if left overnight.

Colonoscopy this Wednesday so I will eat two great meals today & a solid breakfast tomorrow and then fast and prep for the fun on Wednesday.
