I found another setting on my counter top oven, Roast. It kicks on the convection fan using the broiler element. I got away with 3 hours. I can cut it with a fork. YUM,,,,,,,,,, It had a lot of fat on the top, I put that on top and it melted all of it away and into the brisket. I cooked it to 155* I found a new thing to cook right LOL.........

Sorry for the crappy pic but OH MY it is good. Got 3 more meals out of it.......
