with fish one just puts them in a sealer bag fill with some water to cover the fish and freeze. They last a long time that way. Learned that out in the islands......

Oh well. I've kept (and eaten) frozen meat that was a LOT older than that. How do you protect it? Just wrap it tight?
"Freezer burn does not make the food unsafe; it merely causes dry spots in foods. The food remains usable and edible, but removing the freezer burns will improve the taste."
