"How do you protect it? Just wrap it tight?"

YES - wrapping in saran wrap helps as it cannot 'burn' if there is no oxygen present. I use a Foodsaver vacuum machine and vac pack everything with a date. Seems to last much longer as long as it is sealed without oxygen. I would HATE for those roast(s) you have to burn yet I suspect they will be devoured over the next few months. AND having a vertical freezer vs a chest freezer is also a great choice - easy to see what you have! Mine is so stuffed I honestly just need to empty it out slowly and quit finding deals on meals LOL

Oh well. I've kept (and eaten) frozen meat that was a LOT older than that. How do you protect it? Just wrap it tight?
"Freezer burn does not make the food unsafe; it merely causes dry spots in foods. The food remains usable and edible, but removing the freezer burns will improve the taste."
