Well I need to rotate my bountiful freezer so I decided on an Alaska wild game theme for this years Christmas FEAST!!
Bottom left is a 2# nugget of KING salmon that I will smoke using some hickory from a tree in the back yard. Then top left there are 2 nuggets of Moose. Top top are half dozen 4.2oz lobster tails (the only thing not from Alaska!) Top right is a nugget of 'cow' Musk Ox and bottom right is a large nugget of Caribou. The red meats will all be repackaged and I will add garlic, shallots and other spices and re vac-pack so I can cook them sous vide - 129 degrees for roughly 2-3 hours for a perfectly cooked and tender medium rare.
Will then "cook" them over a hot charcoal grill just to sear and add grill marks. Sides are gonna be bacon wrapped asparagus, deviled eggs and creamed spinach. I have fresh raspberries so I will make some form of dessert with those. A few care plates will also be distributed around the 'hood'
I am already thinking about a nap after all of this LOL.
I warned my guests to come hungry :-)
