Good morning to you ma'am! Youi likely don't want me to tell you about the CARMEL CORN we made yesterday. It is very easyto make at home in the kitchen but having two people does help...
The BUCKEYES and the COCONUT JOYS (think Mounds only sweeter and better) are a one person job and really very simple as well. Scoop out a small round ball and put on wax paper and press it down somewhat flat but about a alf inch thick. Take a teaspoon and make a small roun depression on the top of each coconut ball. When finished with the whole thing you stick the trays of coconut rounds into the refrigerator to cool down and solidify. Later, a few hours, you melt some dark sweet chocolate in a pan over a boiler of boiling water and add some confectionary suger to it and then apply half a teaspoon full to the top of every coconet ball! Put back in fridge to allow chocloate to harden. An hor later you can put all the coconut ball into some containers and keep in refridge until you want some... Better than MOUNDS. IF YOU LIKAE almonds, you could add an almond on top of the chocolate in the center of the coconut ball. BUCKEYES. There are TWO ingredients. JIF Creamy peanut butter and confectionary sugar. MIX together well. Semi swet dark chocolate melted on stove ion a double boiler so the water boling on bottom melts and keeps the chocolate liquidy. After rolling the peanut butter/sugar balls into 3/4 inch round balls and putting on wax paper on a cookie sheet, place in FREEZER to harden for a couple hours. Then melt your chocolate on stove in pot over boiling water (gentle boil) and stir all the morsels until creamy and liquidy.
Remove the hardened peanut utter balls from freezer a few ata time and stick a toothpick halfway into each one. Pick up the ball by thetoothpick and dip in the chocolate leaving only the very top of the ball uncovered. Remove,and take toothpicks out and place in small cookie containers and keep in refrigerator. Better than Reeces Peanut Cups! So I have a refrigerator full of delicious goodies awaiting my family on Wednesday. I am better. Combination of fatigue, my father, work, shopping, and stress. BAD combination.
Seriously, I can send you recipe and instructions tor post them . We have been doing this for decades now. My favorite, and my grand daughter's, is the carmel corn. I could get diabetes eating this stuff so I drool a lot at his time. Have to exercise some self control...
