Well . . . let me see . .
If I was able to accelerate a stream of particles to
above light speed. I could also turn the stream on
and off and then use it to send a morse code type
message with it.

You're asking for an explanation of quantum mechanics, and that is probably beyond the ability of anyone to truly understand. There is a wave function that is fundamental in quantum physics that shows that complete information about a system is conserved at any future time. As I understand it, it means that quantum information cannot be destroyed, not even by a black hole.

BTW, quantum information is not necessarily "meaningful." That brings us back to the old bit about the speed of light. Einstein didn't actually show that nothing can travel faster than the speed of light, but that no MEANINGFUL information can be communicated faster than light. If anything is ever found to travel faster than light, it won't be useful. Of course, there are those who disagree...
