I'm now in the process of canning the 7th and final batch of tomatoes for the season. Until today, all the canning tomatoes came from the dozen Celebrity plants I bought at a small nursery in June. The large-tomato plants I grew from seed went into the ground too late to consider more canning. It's a lesson I'll remember. (The cherry tomatoes and yellow-pear tomatoes, also grown from seed, are doing great though.)

The Celebrities were incredibly productive. I did six batches of red Celebrities previously, and this final batch is 80% Celebrities. I came up a few pounds short so I added some large Azoychka tomatoes (shown on left in an internet stock photo.) A handful of Azoychkas DID ripen. My plants don't look nearly as healthy as these this late in the season.

A "batch," by the way, is 7 quarts. That's how much my big pot holds, so it's become my standard. A quart weighs 2.1 lbs. A batch weighs 14.7 lbs, and I'll have canned about 102 lbs this season. To make one batch, I start with around 20 lbs. After I've cored, cut away bad spots, peeled and diced, about 15 pounds makes it into my pot.

I'm looking forward to planting a bigger variety of vegetables next year and learning other canning techniques.

We've now canned 35 quarts (73 pounds) of tomatoes. There are another 40 pounds or so to do this year.

Canning's not hard, but it's time consuming. I spent six hours on two batches (7 quarts per batch) today.
