Why are some scallops an orange/pink color?

Best Answer: Evan this is a great question and is exactly explainable even to that of fish meat when filleted only to find the meat pinkish orange.
The reason is the food the animal is regularly ingesting (it's diets mainstay) and the reason is shell fish: ie shrimp, crab and lobster gives the meat it's color.
One of the least expensive fish and found regularly in cioppino and bouillabaisse is sculpin a poisonous bottom feeder which gets fairly large (up to six pounds) when cooked properly it even tastes like lobster.

It is more the area there fished, the sex as they have male and female organs, I am former chef from Canada worked in an area here were they are famous, Digby Nova Scotia Canada, I worked with a few french chefs and they were almost faint during the local festival, they have a shucking contest to see who can clean the most in 2 minutes, they scraped out the stomach and coral, then proceeded to dump the lot into Annapolis Bay for the gulls and terns to gobble up, here they do not favour it, I bought scallops with it one from Asian as chef here, in Singapore, Japan and Jamaica we never removed it, in Europe to it is prized, I have seen it a deep orange, pinky orange, light yellow, a reddish brown, it is the plankton they feed on that is the main reason for the colour.
