Initially, the logic behind the hand recount escaped me. After all, Florida's Secretary of State, who is Republican, was ordering a recount of automated recounts that Republicans (Scott and DeSantis) had won. So why do another recount?

Then I learned that "A federal judge denied a request to extend the deadlines just hours before it approached." So it wasn't the Secretary of State's choice.

In fact, the order was very much against the Republicans. Not only does it grant more time for Democrats to submit fraudulent ballots, but it also includes a provision to "correct" the ballots that were invalidated due to signature mismatches. I assume that this means going back to the voters. It's bound to be time consuming.
