Well here in Winston Salem NC this is FAMOUS and delicious. This is a recipe that was printed in our local paper 9 years ago - I have "tweaked" it over the past few years since I experiment with and am curious about almost everything.

ONE thing not listed is a secret ingredient. Sometimes (well - most always) I will add 1 tsp of pure vanilla extract to the dough. This year I am also going to go rouge and use 'dark brown sugar' LOL!!

Moravian Sugar Cake

DOUGH:
½ ounce dry active yeast
½ cup WARM (not hot) water
1 large egg at room temperature
½ cup Crisco Shortening
½ granulated Sugar
½ cup peeled, cooked, mashed Russet Idaho potato
½ cup whole or skim milk (warm)
½ tsp. kosher salt
3 cups All-Purpose flour
5 tablespoons melted butter (2.5 ounces)

FIRST TOPPING (dry):
¾ pound Light Brown Sugar
1 ¼ teaspoons ground cinnamon
½ cup All-Purpose flour
Milk for sprinkling on dough

SECOND TOPPING (wet):
5 ounces Light Brown Sugar (about ¾ cup firmly packed)
5 tablespoons butter (2.5 ounces)
4 ½ tablespoons whole or skim milk

1) Proof yeast in the warm ½ cup of water.
2) Cream egg and sugar – add warm milk, potato, Crisco, and yeast mixture. Mix on LOW and gradually add flour and salt slowly until combined.
3) Use dough hook on mixer and knead till smooth – 10-15 minutes.
4) Let dough rest for 10 minutes – spread on greased jelly roll pan (13x1Cool
5) Place dough in center of pan and stretch outward till corners are filled.
6) Brush with melted butter – MIX first topping and spread evenly over the dough. Let dough rise in warm place (about 85 degrees) for 30 minutes.
7) Using fingers poke deep holes in dough everywhere then sprinkle lightly with milk.
Cool Let rise again - another 30 minutes
9) Heat oven to 375 degrees. Bring second topping to a boil in small pan and set aside.
10) BAKE cake till brown 15-20 minutes. Do not over bake!!
11) Immediately brush with second topping – let rest at room temperature till cool.
12) Cut into sections and wrap with plastic! Keeps 3 days or tightly wrap to freeze!
