Heirlooms, in case you're unfamiliar with them, are plant varieties that are open-pollinated - meaning that unlike hybrids, seeds you collect from one year will produce plants with most of the characteristics of the parent plant. And that's key to their survival.

Thanks to the concerted efforts of Burpee, Monsanto and companies like them, many of the plants and seeds you can find in stores will NOT produce viable seeds. If you're thinking long-term survival, you need heirloom seeds.
