Steel is the way to go, especially these days when its price isn't too far off of its all-time (in year 2000 dollars) low.

Wood has some advantages. Debatably, it's more attractive. (I think so, anyway.) It's easier to insulate. It's not prone to condensation problems. Animals aren't going to get their tongues stuck to it. But price and maintenance tip the scales in the direction of metal.
