I make Gravlax.
Its easy, a side of salmon, (or nice a piece) skin on, kosher salt & sugar & weighted down in the fridge for a few days.
Rinse pat dry & slice thin, off from the skin.
I serve it with sides of cream cheese, capers, Bermuda onions & dill, bagels & baby rye bread rounds.

My daughter asked me for my recipe & made it recently.
Nice to know she'll pass it on ;))

Hi Joe:

I love lox and cream cheese (and onion) on a decent roll. Miss it since the Borscht Belt, my old hangout, went defunct. My daughter always features it on Xmas mornings.
