It's pretty straight forward. For a hundred different reasons, I've concluded that the other 49 states are worse.
Many are heavy handed in their governance. Others are too ugly, hot, dry, expensive, leech infested, boring, obnoxious, economically risky, dangerous, crowded, etc. Sometimes, the problem is the geography. More often, it's the people.
I'd have to write a few paragraphs on each of those characteristics before you'd understand what I meant and why New Hampshire is the logical choice for me.
You're right that farming will be difficult, but it won't be impossible. There are many other farms in the area. I'll have plenty of land and will only need to grow enough to sustain my family. Beyond that, whatever I raise or grow can be used in barter. I think it will be fine.
