Just finished baking 12 pounds of roaster chicken breasts & made chicken salad for Easter brunch. Difficult to blend this amount with apples & celery & mayo, needed to use my big soup pot.
I brined them yesterday, so they are nice and moist & flavorful. Tommorrow I'll bake lemon bars.
