We were successful using Cattle/feedlot Panels to grow stuff on. Roma Tomatoes, Peppers, Squash, we even grew cantaloupe one year. Keeps everything out of the dirt/mud.

Grew potatoes in five gal buckets.
Drill a few drainage holes in bottom
Add a couple inches of straw.
Add seed potatoes and cover with three inches of more straw'
As they grew keep adding straw until you reach the top.
