I bought my MacBook Pro with a 500Gb SSD but have 3Tb of spinning disks attached. I load all of my executables/apps on the SSD as well as the day-to-day working files, but I archive and save less accessed files on the spinning disks. When I travel, one of the external drives goes with me, a 1Tb spinning disk (the other drive, 2Tb, is mostly archive and back-ups and it stays home, locked in my safe when we're traveling). I'm considering upgrading the archive/back-up disk to a 4-6Tb spinning disk, but I've been looking at replacing the travel disk with something like a 2Tb SSD drive.

As for you performance improvement, yea, it can be amazing. When I was still working we used Dell laptops and they had a company-wide upgrade for those of us who had to work with customers in the field. They upgraded all of our laptops with SSD drives and it was amazing. At the time I was running a Mac Pro at home, all spinning disks, but when I retired and needed to get my own laptop, I of course opted for a MacBook Pro to replace the old Mac tower, but I made sure that I got the biggest SSD drive that I could at the time, which was 500Gb. Once you start using a computer where your OS and executables/apps are on an SSD, you'll never want to go back to an all spinning disk system. It's like night and day.

BTW, finally poked a 2 Tb SSD into my 2012 Mac Pro, new life, quicker, faster boot than ever... Should done it years ago, but.. So now 4 - 2 Tb drives, 32Gb RAM, Still Mojave, but all my elderly software works better than ever..
