I had sweetbreads with foie gras, and beef hearts in awesome sauces both. A ribeye in Durango was out of this world along with local lamb chops and shank in Santa Fe.
There was also a baby grasshoppers dish I had no time to try......they said were crispy(fried), with a very rich protein aftertaste.
